Carrot, Ginger & Lentil Soup
Jun 30, 2024This warming soup is super simple to make & contains the benefits of garlic and ginger to boost antioxidants which may help you stay healthy, or bounce back faster if you get sick.
Serves 5
Ingredients
1 onion, diced
4 cloves garlic, crushed
Thumb of raw ginger grated
1 tsp ground tumeric
4 medium carrots, diced
1 cup large diced pumpkin
1 - 1.5L stock (veggie or chicken) - add more if you prefer thinner soup
1 cup red lentils, rinsed
Directions
- Heat olive oil to a saucepan & when warm, add onion.
- Cook garlic for a few mins then add garlic, ginger & tumeric. Cook for another minute, stirring.
- Add carrots, pumpkin, stock & lentils & bring to a simmer. Cover and cook for around 15-20mins until veggies are soft.
- Use a stick blender & blend until smooth.
