I love a good salad. Especially one that you can make a bulk batch of and it will keep a few days ready to add to lunches to make the weekly meal planning run smoother.

What you need:

Quinoa (cooked) – around 1-2 cups depending how much you want to make

Asparagus spears (lightly steamed)

Snow Peas (sliced)

Cannellini Beans (1 can, drained & rinsed)

Corn (fresh) – cooked & kernels sliced off

Fresh Parsley & Coriander – chopped

Pomegranate (use a whole pomegranate or frozen tendrils)

Walnuts

Combine all ingredients in a large bowl and dress with extra virgin olive oil and lemon juice.
